250g leek sliced (only the white part)
1 red onion sliced
1 garlic clove chopped
1 tbsp olives
2 tbsp Parsley chopped
250g French fries (very thin sticks)
In a skillet, sauté the garlic, the onion, the leek. Season with salt & pepper and let cook. In a bowl beat the eggs, season with a pinch of salt and pepper and add half of the parsley. Add the potatoes already fried to the skillet, mix, and add the eggs. Mix it all and cook as you like. Top with the parsley, the olives, and a pinch of freshly ground black pepper.
Note: even in a low carb diet we should eat some carbs. All we have to do is control quantities.
