Today I bring you a recipe from our program “Unveil Your Beauty”. If you are looking for help to eat healthier, this is your opportunity. You have a whole week meal plan with all the nutrients our body need with a special focus on iron, so important for us women.
This recipe it´s great for whole family.
Recipe:
Ingredients
1 onion sliced
1 red pepper sliced
2 garlic cloves
2 handful of spinach
1 can of white beans
3 eggs
1 tbsp smoked paprika
Salt and pepper
1 tbsp coriander
Olive oil
Preparation
In a skillet cook the onion, the garlic, the red pepper with olive oil for 2 minutes. Add the beans and season with salt, pepper and paprika and let for more 4 minutes. Add the spinach and cook until shrink. In a bowl mix the eggs and add the coriander and a pinch of salt and pepper. Add the eggs and mix until cooked. You can top with more fresh parsley, ground black pepper and pumpkin seeds.
